Great flavor!

I slow-roasted the Koopmann crossrib roast at 300F. I let it cool for 2+ hours. I trimmed off the gristle streaks and fat (somewhat more than on store-bought beef), then sliced and served.. Our guests were amazed by the great flavor! Even the I-don’t-normally-eat-red-meat spouses couldn’t resist “just one more roast beef canapé on baguette with horseradish, mayonnaise, & fresh dill.
